Boesenbergia Rotonunda, commonly known as “little fingers” because the rhizome resembles that of fingers growing from a center piece, is a kind of ginger (Zingiberaceae).
It is an annual crop from southern India, Yunnan province in China, western Malaysia and Southeast Asia, its origin is in the rainforest.
It has an underground trunk, called rhizomes.
The central part is more swollen than the head and the lower part.
The inner part has a variety of colors depending on the type of finger root and the aroma.
It is widely used in Javanese cuisine in Indonesia.
